The Sultan's Mother Falls Ill
Long ago, in the beautiful city of Manisa in Turkey, lived Hafsa Sultan β the mother of Sultan Suleiman the Magnificent. One winter, she became very ill. The palace doctors didn't know what to do.
The Physician's 41-Spice Recipe
The palace called for Merkez Efendi, a wise physician. He gathered 41 different herbs and spices β cinnamon, ginger, saffron, carob and many more β and ground them into a thick, wonderfully fragrant paste.
The Remarkable Recovery
Hafsa Sultan tasted the paste and slowly β she got better. Overjoyed, she declared: "This recipe must not stay in the palace. It belongs to everyone."
The Flying Sweets β Every Spring Since
Every spring since 1539 β nearly 500 years β the people of Manisa gather at the Sultan Mosque. Packets of mesir paste are thrown from the minarets into the crowd below. Everyone shares.
