What Is Mesir Paste?

Centuries before the modern world learned to bottle its remedies — there was mesir. A sweet that has been part of Turkish life for nearly 500 years.

Mesir paste is a dense, chewy, intensely aromatic sweet made from a precise blend of 41 herbs and spices — cinnamon, ginger, saffron, cloves, cardamom and 36 more. It is sweet first, then gently warming.

Mesir paste comes from one place: Manisa, a city in western Turkey with a long Ottoman history. The recipe has been made there since 1539. The EU's Protected Geographical Indication status means it legally can only be called Manisa Mesir Macunu if made there.

Long ago, in the beautiful city of Manisa in Turkey, lived Hafsa Sultan — the mother of Sultan Suleiman the Magnificent. One winter, she became very ill. The palace doctors didn't know what to do.

The palace called for Merkez Efendi, a wise physician. He gathered 41 different herbs and spices — cinnamon, ginger, saffron, carob and many more — and ground them into a thick, wonderfully fragrant paste.
